After the grapes were pressed, the juice was racked to preserve the delicate aromas and flavors characteristic of Sauvignon Blanc. In response to a very warm growing season, fermentation was cooler on average this year to preserve the bright aromatics of the grape variety. The cooler temperatures slowed the process, allowing more time on lees and imparting more textual richness and layered fruit complexity. A touch of Semillon was added to the blend for its lively acidity and citrus zest.
For the third vintage in a row, the 2015 North Coast of California saw low rainfall and an abundance of sunshine and warmth. In October, an unusually cool plateau effect set in, which allowed grapes to hang on the vines longer than in recent years, all while maintaining the grape’s high acids with low sugar accumulation. As a result, intense tropical notes of passion fruit, lychee and ripe grapefruit were abundant from our fruit sourced from the Russian River Valley, while Lake County (a majority of the 2015 blend) gave us lime, lemon zest and appealing minerality.
